Wild Recipes : Food inspired by the local land

The above dish was served by our local wild foods group, The Mesquitos, at the Gila River Festival 2017. Many of the following ingredients that were not locally foraged and processed were locally grown. Three sisters salad with corn, beans, nopal and lemonade berry dressing, turkey sausage with wild tarragon, mesquite corn pancakes, winter squash, acorn crusted quiche with nettles, lambs quarters and tomatillos, amaranth and radish sprouts. *denotes locally foraged
